Culinary / Administrative Fee

Over the past several years, and living in a post-pandemic reality, the disparity in compensation, particularly between the Front of the House staff and Back of the House staff, has widened dramatically. Increased food costs have resulted in higher menu prices and therefore higher gratuities while kitchen wages have increased at a slower rate as restaurants have struggled to maintain reasonable profits.
In order to better balance the compensation among the FOH staff (host, runners, servers & bartenders) and BOH staff (dishwashers, prep cooks & line cooks), Brewer's Tap & Table is implementing a 4% Culinary & Administrative Fee on all guest checks.

This fee is calculated on food, beverages and services provided. It is not charged on taxes or gratuities. This fee allows us to provide our culinary team with increased wages and other benefits. It also allows us to target revenues to these groups directly, rather than increasing menu prices with results in higher checks, greater taxes and greater tips (which are typically based on check amounts).
